Adjarian khachapuri comes from the Black Sea coast of Georgia, and it might be the most joyful cheese bread in the world. A soft yeasted dough is shaped into a boat, filled with a bubbling mix of cheeses, then topped with an egg and a pat of butter right out of the oven.
In Georgia it is made with local cheeses called sulguni and imeruli. Low-moisture mozzarella and feta are a reliable stand-in, giving you the same stretch and salty tang.
To eat it, stir the hot egg and butter into the cheese with a fork, then tear off pieces of the crust and dip them into the center. Serve it immediately, while the cheese is still molten.
