Butter chicken, or murgh makhani, is the mellow, silky cousin of tikka masala. The sauce leans sweeter and smoother, thanks to butter, a touch of honey and soaked cashews blended right in for body without extra heaviness.
We sear the marinated chicken in a hot skillet rather than broiling, which gives you browned edges and a fond that goes straight into the sauce. The whole sauce is blended until completely smooth, then finished with cream and dried fenugreek leaves for that unmistakable aroma.
It is mild enough for kids and satisfying enough for everyone else. Spoon it over basmati rice, pile on the naan, and consider a squeeze of lime to brighten the richness.
- Mild and kid-friendly
- Cashew-silky blended sauce
- Seared for extra flavor
