Chicken cordon bleu is a retro dinner-party star that deserves a comeback, and baking it makes it far easier than the deep-fried original. Thinly pounded chicken wraps snugly around ham and Swiss cheese, then gets a coat of butter-tossed panko and parmesan that crisps beautifully in the oven.
The trick is to roll tightly and chill the rolls briefly before breading, so they hold their shape and the cheese stays inside where it belongs. A little Dijon brushed on the chicken adds a tangy backbone.
The quick Dijon and Gruyere sauce is optional, but once you have tried it you will not skip it. Serve with green beans or a crisp salad and buttered egg noodles.
- Baked, not deep-fried
