Homemade mozzarella sticks beat the freezer aisle every time, and the secret is simple: bread them twice and freeze them before frying. That double coat and deep chill mean the crust turns crisp and golden before the cheese has a chance to leak out.
We use low-moisture mozzarella string cheese for a clean melt and a long pull, and season the breadcrumbs with parmesan, garlic powder and dried oregano so the crust tastes like something on its own.
A fast garlicky marinara takes about ten minutes while the sticks freeze. Serve them the second they come out of the oil, with the sauce warm on the side.
- Double-breaded for no leaks
- Freezer-friendly make-ahead
- Quick garlic marinara included
