Key lime pie is a Florida Keys original, and it is refreshingly easy. Sweetened condensed milk, egg yolks and tart lime juice come together into a silky custard that needs only a short bake to set, all in a crisp, buttery graham crust.
Key limes are smaller and more aromatic than regular limes, with a sharper, floral tartness. Fresh-squeezed juice is wonderful, but good bottled key lime juice works well, and regular limes make a perfectly delicious pie too.
The pie needs a few hours in the fridge to firm up, so it is a great make-ahead dessert for warm-weather cookouts. Top it with whipped cream and thin lime slices just before serving.
- Tart, creamy lime custard
