These are the crispy tacos many of us grew up on, made better. Instead of store-bought hard shells that shatter at first bite, we fill fresh corn tortillas with spiced beef, fold them, and fry them in a shallow layer of oil until golden and blistered but still slightly pliable.
The filling is simple and deeply savory: ground beef browned well with onion, garlic, chili powder, cumin and smoked paprika, then simmered with a little tomato paste so it is juicy but not wet enough to make the shells soggy.
Once they come out of the pan, open them up and stuff them with a generous handful of sharp cheddar so it melts from the heat, then pile on the cold, crunchy toppings.
- Pan-fried golden shells
- Melty sharp cheddar

Ingredients
Directions
Heat 1 tbsp oil in a large skillet over medium-high heat. Add the onion and cook until softened, about 4 minutes, then add the garlic and cook for 30 seconds.
Add the ground beef and cook, breaking it into small crumbles, until browned and no longer pink, 6 to 8 minutes. Spoon off excess fat.
Stir in the chili powder, cumin, paprika, oregano, salt and tomato paste and cook for 1 minute until fragrant.
Add the water and simmer, stirring, until the liquid has mostly evaporated and the beef is juicy but not saucy, about 5 minutes. Transfer to a bowl and wipe out the skillet.
Wrap the tortillas in a damp paper towel and microwave for 30 to 45 seconds until warm and pliable.
Spoon about 2 heaping tablespoons of beef onto half of each tortilla and fold it over into a half-moon.
Heat the 1/2 cup oil in the skillet over medium-high heat until shimmering, about 350 degrees F.
Fry 3 or 4 tacos at a time, pressing the edges gently with a spatula, until golden and crisp, 2 to 3 minutes per side.
Drain the tacos on a paper towel-lined rack and repeat with the rest, adding a little more oil if the pan looks dry.
While they are still hot, gently open each taco and tuck in the cheddar, then top with lettuce, tomatoes, sour cream and hot sauce.
Test-kitchen tips
- The seasoned beef can be made up to 3 days ahead and refrigerated, or frozen for up to 3 months. Warm it slightly before filling so the tortillas fold without cracking.
- Keep finished tacos crisp in a 200 degree F oven on a wire rack while you fry the rest of the batch.
- Swap half the cheddar for pepper jack for a little heat, or use ground turkey or chicken in place of the beef.
