In Greece, a village salad, or horiatiki, has no lettuce and no fancy dressing. It is built on ripe summer tomatoes, crunchy cucumber, green pepper, briny olives and red onion, all dressed simply with good olive oil, a splash of red wine vinegar and dried oregano.
The crowning touch is a whole slab of feta set right on top, so everyone can break off creamy, salty pieces as they eat. Salting the tomatoes for a few minutes first draws out their juices, which mix with the oil to make a dressing at the bottom of the bowl.
Serve it with grilled meat or fish, and always put out crusty bread for mopping up those juices.
- No lettuce, all summer
- Whole slab of feta
- Ready in 20 minutes
