The Monte Cristo is where French toast and a ham and cheese sandwich meet, and it is every bit as indulgent as that sounds. Layers of ham, turkey and nutty Gruyere go between slices of slightly stale brioche, then the whole sandwich takes a quick dip in eggy custard and a turn in a buttery skillet.
We finish them briefly in the oven so the cheese melts all the way through without the outside getting too dark. It is a restaurant trick that takes the stress out of timing.
The sweet and savory contrast is the whole point, so do not skip the dusting of powdered sugar or the side of raspberry jam for dipping. Serve for brunch with a crisp green salad.
