Paneer bhurji is the vegetarian cousin of spiced scrambled eggs, and it is a staple of Indian breakfast tables and street stalls. Crumbled fresh paneer is cooked into a fragrant base of cumin, onion, ginger, garlic, green chiles and tomatoes until every bit is coated in flavor.
The secret is to cook the masala properly, until the tomatoes break down and the ghee glistens at the edges, then add the paneer at the very end so it stays soft and moist. A splash of milk and a pinch of dried fenugreek leaves make it creamy and aromatic.
Scoop it up with hot parathas or roti, or pile it onto buttered toast for a quick weekday breakfast.
