Bruschetta is really about two things: tomatoes at their peak and bread with a proper crunch. We salt the chopped tomatoes and let them drain for a few minutes, which concentrates their flavor and keeps the toast from going soggy.
The bread is brushed with olive oil, grilled or broiled until charred at the edges, then rubbed with a raw garlic clove while still hot so it perfumes every slice. A splash of red wine vinegar and plenty of torn basil finish the topping, and a few shavings of parmesan add a salty, nutty note.
Spoon the tomatoes on just before serving, and pass the extra juices for anyone who wants to drag their toast through them.
- Peak-season tomato flavor
