Pide is Turkey's answer to pizza: a long, boat-shaped flatbread with pinched ends, baked in a very hot oven and sliced into strips for sharing. Cheese pide, called peynirli pide, is a bakery staple and one of the simplest and most satisfying versions.
The soft dough is enriched with a little olive oil, and the filling combines crumbled feta, which stands in for Turkish white cheese, with mozzarella in place of kasar for a good melt. An egg binds the filling, parsley adds freshness and a pinch of Aleppo pepper brings mild warmth.
Brush the hot crust with melted butter the moment it comes out of the oven, then slice and serve with a simple tomato and cucumber salad.
- Classic Turkish bakery favorite
- Feta and mozzarella filling
- Buttery golden crust
