Smothered pork chops are Southern home cooking at its most soulful. Thick, bone-in chops are seasoned, dusted in flour and seared until golden, then gently simmered in a velvety onion gravy until they are fork-tender.
The gravy starts with the browned bits left in the skillet. Slowly cooked onions add sweetness, a roux made from the pan drippings thickens it, and a splash of milk at the end rounds it out. Simmering the chops right in the gravy keeps them juicy and lets the two flavor each other.
Choose chops about 1 inch thick so they do not dry out during the simmer. Serve over white rice or mashed potatoes with collard greens, and make sure there is extra gravy for everything.
- Silky onion pan gravy
